Tasty Crepes

tasty crepes for a sunday morning!
Ingredients:
1 cup plain flour
pinch of salt
teaspoon caster sugar
bit of melted butter (helps to stop it from sticking to the pan)
dash of vanilla essence
1 egg
milk (as much as you need till the mixture is runny)
shake of nutmeg and cinnamon
- put in flour, salt, sugar, spices – mix about a bit
- make a dip in the middle and add egg and vanilla, mix and slowly bring in some of the flour from the side
- pour milk in slowly, mixing and bringing in the flour from around the edge, make the mixture smooth before adding more milk and then mixing the flour into it
- when everything is mixed in and the mixture is runny, leave for a few minutes so that all the bubbles rise to the top
- Make the pan hot on the stove, rub butter or oil over it and then put a few spoonfulls into the pan, spreading it out so it is thin
- cook, put on plate – slather in tasty topping and enjoy!
Suggested toppings include: slices of strawberries, sprinkle of caster sugar and lemon squeezed over, nutella spread over with sliced bananna – hmms tasty crepes!
Spinach and ricotta cannelloni

- Cannelloni tubes
- 500g ricotta cheese
- 500g spinich (frozen is fine)
- parmesan cheese
- 2 x egg yolks (or full eggs – your choice)
- salt & papper
- basil & oregano
- nutmeg
- grated cheese
- Tin of tomatoes
- Pasta sauce (something thick and tasty)
- tomato paste (optional – just makes sauce thicker)
- Garlic cloves (2-3 depending on how you like it)
- Baking dish (deep is good), mixing bowl, deep frying pan
- Heat oven to 200 degrees
Cannelloni filling:
- Mix ricotta, eggs, spinch together, add salt/papper/nutmeg/garlic/basil/oregano to taste, add some parmesan and a handful of grated cheese (more if you want it more cheesey)
- Once mixed, spoon/push/use icing piper to fill cannalloni tubes
- Place in baking dish
Pasta sauce:
- Mix in heated pan on stove – tinned tomatoes, pasta sauce, tomato paste, garlic – season to taste and heat for a few minutes to thicken/mix the sauce.
- Pour sauce completly over cannelloni (to cook properly the cannelloni needs to be covered)
To finish – cover in cheese and put in heated oven for 30 minutes (just check cannelloni is soft before dishing out)!
Great with garlic bread and salad!
